Texas Style Guacamole

Ingredients:
2   Hass Avocadoes, nice and ripe
8 oz   Cream Cheese, softened (no substitutes)
1 T.   Lemon juice
1 pkg   Great Guacamole Seasoning mix
1/4 C   Salsa, (select your own favorite heat index)
     
 Steps:
1.  In a food processor, blend the meat of the avocadoes with cream cheese and lemon juice.
2.  When blended, add seasoning and salsa
3.   Refrigerate for at least an hour -- Enjoy!
Hot Crab Spread
8 ounces cream cheese
1/2 teaspoon cream style horseradish
1~ 6&1/2 ounce can flaked crab meat
2 tablespoons finely chopped onion
1 tablespoon milk
1/4 teaspoon salt
dash pepper
(You could "spice-up" this recipe by using some cayenne pepper....be careful tho! Personally...I would use a "tad-of" freshly ground mixed peppercorns.)

Combine and blend well.  Spoon into oven proof dish.  Sprinkle with 1/3 of a cup toasted,.. slivered almonds. Bake in a 375'F degree oven for 15 minutes. Serve hot with crackers.
Bob's Shrimp Ball
Ingredients:
2 (8 oz packages of brick Philly cream cheese)
1 small onion minced
3 (4.25 oz cans baby shrimp)
Horseradish ( use homemade IF you happen to have it available!)

Leave the cream cheese out for awhile it makes it easier to mash, it should be semi-smooth.  Drain the shrimp well & place in a bowl then mash with a fork till flaky. Peel and mince 1 small yellow onion.  Combine all 3 items, blending well. Line a round bowl with plastic wrap add mixture and chill for 2 to  4 hours.

TO SERVE: Turn bowl upside down on platter and release mixture to platter. Remove plastic wrap.  Pour sauce over ball,...serve with crackers of your choice.

Sauce:
1 oz lemon juice with some finely grated rind
1 (14 oz bottled catsup)
4 tbs. bottled horseradish ( or start with 2 tsp. homemade) then add more to taste.  

Mix well.
Serve with any cracker of your choice.... like water crackers, plain Ritz etc.

This looks pretty if you use a glass dish or platter, place the shrimp ball in a smaller dish in the center pour the sauce over it and place the crackers around the larger plate.

Turkey Salad Rolls with Cherry Hoisin Sauce

Garlic & Bean Hummus

Cucumber Noodles

Cucumber Jello Salad
 

6 lg. cucumbers
3 envelope unflavored gelatin
3/4 c. water
1 c. mayonnaise
1 (8 oz.) carton commercial sour cream
1 tbsp. grated onion
1 tbsp. minced fresh parsley
1/2 c. whipping cream
1/4 tsp. salt
1/4 tsp. white pepper
Cooked fresh artichokes
 
Cherry Tomatoes/garnish

Peel cucumbers and remove seeds; coarsely chop, and place in container of food processor or electric blender; process until smooth.
Sprinkle gelatin over water in a saucepan; cook over low heat, stirring constantly, until gelatin dissolves.
Stir gelatin mixture and next 4 ingredients into cucumber puree. Beat whipping cream until soft peaks form; fold into cucumber mixture.
Pour into a lightly oiled 6 cup ring mold; chill until firm.

Unmold the salad onto a serving platter.

~6-Hard-boiled Eggs (Chopped coarsely)[personally, I would mash the eggs, to make the finished product more spreadable!]
~2 Tblsp.-Kraft Olive Oil Mayonaise®
~1 Tblsp.-French's Dijon Mustard®
~1 Tsp.-Kraft Horseradish®
~1 Tsp.-Tumeric (Ground)
~1 & 1/2 Tblsp.-Sweet Pickle Relish
~1 Tblsp.-Pimientos
~1 Tblsp.-Fresh Chives (Chopped finely)
~2 Sprigs-Fresh Dill (Chopped finely)
~1 & 1/2 Tblsp.-Lemon Juice
~1 Tsp.-Celery Seed
~1 Tsp.-Peppercorns (Cracked)
~Sea or Seasoned Salt (To Cook's taste--Optional)

~1 Tblsp.-Bacon Bits (a nice "option" as well!)

Directions:
~~~In a medium, mixing bowl, SIMPLY...BLEND TOGETHER ALL, LISTED INGREDIENTS, STIR, and...
