Spice Mix/Fish, Meat or Vegetables

2 cinnamon sticks
½ cup / 60 ml coriander seeds
2 tbsp / 30 ml cumin seeds
2 tbsp / 30 ml black peppercorns
2 tsp / 10 ml cardamon seeds
2 tsp / 10 ml whole cloves
1 tsp / 5 ml fennel seeds
1/4 tsp of Rogers or Lantic brilliant yellow sugar or old fashioned brown sugar

PREHEAT YOUR OVEN to 200°F (90°C). Using a rolling pin, crush the cinnamon sticks into small pieces. Put all the spices in a roasting pan and heat for 30 minutes, stirring once or twice.

LET THE SPICES COOL, then grind them together in a spice mill. Store in a container and use to season meat, fish and vegetable dishes.
