Old-Fashioned Jam Cake Recipe
1/2 lb. butter
3 C. flour
1 t. allspice
2 C. sugar
1/2 t. salt
1 C. buttermilk
4 whole eggs
1 t. cinnamon
1 t. soda
2 egg yolks
1 t. ground cloves
2 C. blackberry jam
Cream butter and sugar until fluffy. Add eggs and yolks; beat until light. Sift flour with dry ingredients. Add flour mixture alternately with buttermilk; add jam. Bake in 3 greased and floured 8-inch pans for 35 minutes at 350° F.
2 egg whites
12 oz. butter
2 C. sugar
1 C. evaporated milk
Cook butter, sugar and milk to soft ball stage; pour slowly over stiffly beaten egg whites. Spread between layers and over cake.
